Energy Fritters

These fast and delicious fritters contain a rich variety of F.E.O.N's (Food Essential to Optimum Nutrition). Great way to up your veggie intake, good for brekkie or hot or cold and looks good on a plate so kids love em too. 

Energy Fritters

Prep: 10 mins
Cooking time: 10 mins
Makes 24 fritters  

2 large carrots, grated
2 large zucchini, grated
200g brocolli florets, finely chopped 
½ cup fresh parsley, finely chopped 
3 tbsp grated 'low fat' mozzerella cheese 
2 tbsp rice flour 
1  whole egg (60g) lightly beaten
2 egg whites
fresh cracked pepper to taste
canola cooking oil spray

Method

  1. Cup small handfuls of the grated carrott and zucchini in hands and squeeze out access moisture. Place in large mixing bowl. Add parsley, broccolli and cheese. Combine well.
  2. Add flour and pepper to vegetables, then add eggs and mix well.
  3. Lightly spray a non-stick pan with oil and place over medium heat. Spoon mixture (¼ cup size) into pan and cook 2-3 minutes each side over medium heat.

TIP: You can literally add any vegetable you like to make fritters, try adding fresh grated beetroot or celery to the mix.

High Protein Vanilla Blueberry Muffins

High Protein Vanilla-Blueberry Muffins

¾ cup oatmeal
¼ cup oat bran
1 tbsp of whole wheat flour
6 egg whites
½ scoop (15g) of vanilla protein powder (local chemist or health shop)
¼ teaspoon of baking soda
1 tbsp of extra virgin olive oil
1 cup frozen blueberries
½ teaspoon vanilla essence 

Method

  1. Mix all ingredients (except blueberries) in a blender until thick.
  2. Add the blueberries and stir with spoon or spatula.
  3. Pour the mix into a muffin tin and cook 180°C (350 °F) until cooked (about 30 minutes).

Now that we are well into 2011 we thought it was time we let you all know about the news at Boxfit Geelong. We have two new bootcamp classes each going for 8 weeks starting 28 Feb for Mondays and Wednesdays and 1 March for Tuesdays and Thursdays.

If boot camp is not your thing we have some Zumba classes starting soon. We have doubled the size of our gym so we will be putting on heaps more classes in the near future. So keep an eye out for Muay Thai Advanced, Zumba classes and circuit & cross training.

Are you a bit pressed for time? Try our 30 minute personal training session for $25. Great for your lunch break - get in, get fit and get out!

Don't forget our Circuit & Weight Loss Cross Training Groups on every Tuesday and Thursday at 5.40pm.

Muay Thai Trip to Thailand

For our Muay Thai fans or fans of fitness groups we have a 'Training in the Tropics Tour' to Phuket, Thailand staying at a Thai Boxing fitness camp. Cost is approximately $2100 for a 2 week tour including flights, accommodation, training and food. There will be time off for sightseeing and relaxation or activities, plus a fight night show at big Bangla Road Stadium in Patong where all Thai boxing fights in Phuket are fought. Great night!
